Mother’s Day…brunch ideas

Mother’s Day is around the corner.  Here are some  brunch ideas for your gathering.  Whether you make everything yourself, cater or potluck  you will find some simple things you can do to make the day extra special. Mom will appreciate the extra love!

 

This is an egg, sausage and potato breakfast casserole with cheese.  This recipe can be made ahead of time.  I’ve made this casserole several times during the holidays.  Instead of the potatoes,  I’ve used  french bread.  You can use different kinds of breads.  Slice bread does not work very well because they fall apart and get soggy when you add the wet ingredients.    Ciabatta bread works well too or any bread with a hard crust.  I cut up the bread into small pieces and add the egg mixture.  For the complete recipe click here.

Nutella French Toast with Strawberries recipe:    1 cup sliced strawberries  2 teaspoons sugar  Juice of half a lemon  4 slices of bread (I used Italian)  About 1/2 cup Nutella  1 large egg  3/4 cup milk  2 tablespoons melted butter  1 teaspoon vanilla  1/4 teaspoon ground cinnamon  1/4 teaspoon salt  butter (for the pan)  Powdered sugar for serving

Kale and egg frittata, a much healthier option.  If you are watching your cholesterol you can make it with egg whites as well.

Crab cakes with roasted garlic mayo.  These crab cakes remind me of my trip to Baltimore, Maryland. They are so delicious.  I love the crunch when you first bite into them.  They are so good.  Mom will definitely appreciate the extra effort! Make sure you get 100 % crab meat.  It really does make all the difference in taste.  Can’t wait to have these again!

Strawberry Spinach salad with candied pecans.  This is one of my favorite salads to make.  I had found a similar recipe at Wilson’s Farm here in my neck of the woods.  I’ve been using it ever since.  For an added sweetness add dried cranberries and for a savory flavor add bits of bacon.  Top it with a balsamic vinaigrette dressing.  A real crowd pleaser.
